How long can a grazing table safely stay out?
For most perishable items on a grazing table, including soft cheeses, cured meats, dairy-based dips and any seafood elements, two hours at room temperature is the generally accepted food safety guideline in Australia. Beyond two hours in warm conditions, certain items begin to move outside the safe temperature zone.
This does not mean your grazing table is only viable for two hours. It means that high-risk items should be refreshed after two hours if the event continues. At Catering By Chefs, we account for event duration when planning the grazing spread. For longer events, we stage the replenishment of perishable items rather than laying everything out at once, ensuring the table always looks abundant while keeping the food genuinely safe to eat.
