Phil and his team arrived at the Moorabbin home at 5:00pm, a full hour ahead of the 6:00pm guest arrival, to set up the full service. As guests arrived and settled in, roaming canapés were passed from 6:30pm: smoked salmon on mini herb pancakes with dill cream, ricotta and zucchini tartlets, and vegetable frittata with roasted pumpkin and baby spinach. At 7:00pm the cold and hot buffet was opened, anchored by a stunning seafood centrepiece of Coffin Bay oysters and Queensland king prawns alongside a generous spread of cold meats, salads and sides.

The catering at the 90th birthday in Moorabbin was delivered across three phases: roaming canapés to welcome guests as they arrived, followed by a full cold and hot buffet opened at 7:00pm. Every item was freshly prepared by the CBC chef and presented by the CBC waiter throughout the service.
